Association (ESA) was founded on the 11th of October 2000 in order to share knowledge and coordinate activities in the beverage industry, to train hotel and restaurant sector specialists, teach wine cellar management and oversee functions related to wine and beverage culture in Estonia. The aim is to improve the standards of Estonian restaurants. Since 2002 ESA has been member of the Association de la Sommellerie Internationale (ASI), who is the governing body of sommeliers in the world. Since 1996 the best sommeliers has been representing Estonia at the international competitions. The Board consists of seven voluntary members who are elected at the annual general meeting. Committee organizes tastings, wine fairs, competitions, and keeps the web page www.sommeljee.ee updated, while also sending out newsletters and invitations to the members.

In 2001 The Estonian Sommelier Association junior sommelier and sommelier courses were started and parallel to those advanced studies for the graduates. In 2006 the first sommelier courses based on a of new enlarged program involving technical skill training at the restaurants, wine and food matching by regions and countries, cellar and restaurant management and tasting techniques. Sommelier experience is mandatory in order to enter the program and educational wine trips to wine growing regions are also part of the studies. These studies end with a profound test of knowledge with different standards for junior sommeliers and sommeliers containing a written test, tasting of wines and alcohol, decanting, wine and food matching. In cooperation with neighboring countries and other national organizations willing to help us, we have held seminars involving international experts.
Currently there are 100 members out of whom 50 are professional.
ESA has formed a tasting committee − 20 of the best wine professionals taste 6 times a year new wines on the market and give their tasting notes and opinions about the products. A Wine Fair with the participation of Estonian wine importers and wine promotional bodies is organized every year. It’s a two day event with different lectures about wine and food related subjects. Last year The Best Estonian Sommelier Competition also took place at the fair. Once a year is organized, for members only, a wine trip to different wine regions. The regions visited so far are France (Champagne, Burgundy, Alsace, Rhone, Languedoc -Roussillon, Provence), Austria, Hungary, Italy (Piedmont, Tuscany), Germany, Portugal. For the members is offered twice per month mostly wine, but also spirits tastings with visiting professional winemakers; 3 times a year gastronomical studies with wine and food pairing by top chefs of Estonia.
